Last year, their partnership produced an inventive small-batch buttery Croissant Gin. Lune Croissanterie x Four Pillars Gin The Breakfast Negroni Croissant
Available daily (until sold out) at all Lune Croissanterie venues throughout August, this twice-baked creation is a decadent fusion of French pastry and gin-inspired flavour. Each croissant is filled with almond frangipane (the same stuff inside the galette des rois eaten by the French in January), Four Pillars Negroni syrup, and Four Pillars Orange Marmalade, the latter made from oranges used in distilling their Rare Dry Gin and Croissant Gin.
It’s topped with slivered almonds, baked to golden perfection, then finished with orange marmalade gels piped inside four honey cream kisses. Two delicate meringue shards dusted in dried mandarin complete this citrus-forward masterpiece.
The Return of Croissant Gin
Also back this August, but only via pre-order, is Four Pillars’ Croissant Gin. This buttery, silky gin distils:
- Lune’s French caramel-scented clarified butter
- Macadamia nuts and lemon myrtle from Queensland
- Australian oranges, wattleseed and roasted almonds
- Indian nutmeg
- Macedonian juniper
- Whole Tahitian vanilla pods
The result is a spirit with a hint of vanilla sweetness, nutty depth, and a uniquely rich, pastry-inspired aroma.
