FRENCH LINK: French inspired Vietnamese cuisine
Go from Hanoi to Ho Chi Minh in a dining experience set to take cues from the Vietnamese coast.
Madame Hanoi head chef Sean Thomas will showcase authentic flavours across a five-course menu, with each course highlighting a different Vietnamese region. Thomas, whose culinary background includes time at Melbourne restaurants including the South East Asian-inspired Ginger Boy, will draw on his own travels as inspiration for each dish. And to drink? The expert in-house bar team will pair a cocktail or glass of wine to every course.

FRENCH LINK: Chef Paul Carmichael has Caribbean heritage and will be preparing a Caribbean inspired menu.
Gather for a rooftop dinner unlike any other as Paul Carmichael takes over 2KW alongside its executive chef and his mate Sam Christopher.
The revered Carmichael began working for the Momofuku group in 2010, starting at New York City’s Má Pêche and landing in Sydney five years later to take over the executive chef position at Momofuku Seiōbo. He cooked at Seiōbo until the restaurant’s closure in 2021, honouring his Caribbean heritage across its celebrated menus.
Now, for one night only, Carmichael and Christopher will cross over menus and vibes with matched beverages from 2KW sommelier Dan McEvoy. Expect the unexpected with spice, fire and all things Caribbean.

Adelaide-born and bred, Chef Jimmy Toone of Salopian Inn, is no stranger to a woodfired pizza and a bowl of pasta. Jimmy Toone sparked up SPC (Secret Pizza Club) during the COVID lockdowns as a creative outlet for his cooking at a time when travel to the regions was restricted.
Jimmy Toone’s love of cooking has seen him travel around the world, from the Savoie region of France to the Nagano region of Japan. Jimmy Toone is now landing at Anchovy Bandit for one night only to collaborate with Shane Wilson for the latest instalment of the Bandits Chef Series.
With each session, guests are in for an exclusive treat as Chef Toone and Wilson collaborate to put a unique spin on Anchovy Bandit’s renowned dishes. Brace yourselves for a gastronomic spectacle that promises to tantalize your taste buds with unexpected flavours, showcasing the culinary prowess of these two maestros. FRENCH LINK: A dinner with French flair from a chef who has lived in France
The first Southern Mallee Producers Dinner in 2022 was a sold-out success. Now it’s time to do it all again. The Lameroo Forward Inc committee has gathered its strength and wild enthusiasm for another evening to remember, this time led by a cosmopolitan cook and artist duo.
International cookbook author Robert Carmack recently moved to the Mallee after 10 years in Cambodia, with previous decades living in Sydney, France and America. He will craft Farm Gate to Fire Pit – an exciting salute to Mallee culture, customs and victuals, beginning with snacks warming around the fire and followed by a sit-down dinner of foods with French flair. Expect the unexpected!
Partner Morrison Polkinghorne – Tasmania-born and Alice Springs-bred) is set to bring his artistic background to play in designing the evening’s unique decorations and table settings. The duo collaborated on award-winning The Burma Cookbook, with Carmack also the creator of a further five recipe collections.
Local farmers and enthusiastic beer connoisseurs are planning another unique beverage from a local grain that may even outperform the highly rated Dry and Dusty from 2022. And local gin maker Mallee Spirits, a two-time bronze medallist at the Tasting Australia Spirit Awards, will have locally made beverages available to purchase during the evening.
To round out your Mallee experience organisers are also planning a tag-along four-wheel-drive tour of local parks on Saturday afternoon, with Sunday breakfast on offer at a local farm. Please email organisers for more information.
