Andre Guerinet, the previous owner of Mulot’s Patisserie started teaching at WEA SA last year, sharing the secrets of the art of patisserie acquired over more than 40 years.  Whether you’re after a quiche, or the more delicate macarons and croquembouche, Andre has the course for you.

Discover authentic French recipes with pâtissier Andre Guerinet. Andre will demonstrate how to make vol-au-vents, potato and salmon pie and more. Students will get to fill their own vol-au-vents and to taste and take home as well. Demonstration class with some hands-on.

 

FRENCH SPECIALTIES – GALETTE DES ROIS

You’d be familiar with the Galette des rois eaten in early January in France and some other parts of the French-speaking world – our article about where to find it is always extremely popular each year – here’s the 2025 version, 2026 version coming soon .

The Galette des rois or King Cake, consists of flaky puff pastry filled with almond cream (frangipane) and is served with a small charm called a fève hidden inside. In this class you will learn how to make the galette des rois and Andre will also include the preparation of Madeleine Pastry. A demonstration course with some hands-on experience.

 

FRENCH MASTERCLASS – MACARONS & BRIOCHE

Saturday 14 February – 10am – 2pm OR Mon 13 April 5:30pm – 9:30pm

Andre will demonstrate how to make Macarons and two different types of Brioche, including Saucisson as well as individual Brioches. Students will get to fill their own Macarons and to taste and take home as well. Demonstration class with some hands-on.

FRENCH PASTRIES – CROQUEMBOUCHE & ECLAIRS

André will demonstrate how to make choux pastry for Croquembouche and Chocolate Eclairs. Students will get to fill their own eclairs and to taste and take home as well. Demonstration class with some hands-on.

 

TRADITIONAL FRENCH FRUIT TARTS

Master the art of making traditional French fruit tart. Tarts made with pate sucrée and with seasonal fresh fruits like apples, figs and sugar plums. Finishing with a special chocolate, pear tart. Demonstration class with some hands-on experience.

Autumn in France is a delicious time. Join Andre as he prepares some of France’s Autumn treats. Tarte Normande, Fresh Raspberry Tart, classic Crème Brûlée (Orange Blossom flavour) and a Provence savoury specialty, Pissaladière. Demonstration with some hands-on.
