WHAT ARE CHOCOLATE TRUFFLES?
Delicious. Chocolate truffles are small ball shaped chocolates which contain a ganache filling. Ganache is made of chocolate and cream.
The ganache is then usually coated or rolled in a covering of nuts, chocolate, icing sugar, coconut or cocoa powder.
Wondering why they’re called “truffles”? It is because of their similar appearance to the edible tuber fungus known as a “truffle”.
FRENCH TRUFFLE RULES
According to the Ministry for Economy, Finance and Recovery:
The designation “truffles” can only be applied to a chocolate bonbon, a bite-sized product, in which the chocolate represents at least 25% of the total weight of the product and the fats come exclusively from cocoa and dairy products.
The incorporation of vegetable fats as such makes the designation “fancy truffles” obligatory, and both terms must be written in identical characters.
WHO INVENTED CHOCOLATE TRUFFLES?
In December 1895, Antoine Dufour invented the chocolate truffle when he discovered he had insufficient primary ingredients to make his Christmas confections. He decided to mix cream, vanilla and cocoa powder then dipping that in melted chocolate and covering it in chocolate powder. As such the chocolate truffle was born!
Truffles became much more popular in 1902, when his brother Louis Dufour took the truffle to London and opened the Prestat Chocolate Shop. Prestat still sells “Napoleon III” truffles made to the original recipe.
